RESEARCH INTERESTS
Identification of substances with antioxidant activity, anticancer and/or anticholesterolemic in Mexican foods.
The research area includes the general characterization of compounds, extraction techniques and chromatographic
separations to obtain de bioactives to test them using different bioassays, and in vivo models. Develop new ingredients
for the food industry and design supplements or active principle ingredients for the pharmaceutical industry.
CURRENT RESPONSABILITIES
-
Lead research projects related with the extraction and use of bioactive compounds as supplements or ingredients in food or cosmetic industry.
-
Coordinate projects related with nutrigenomics and compounds extracted from Mexican foods and plants.
-
Coordinate relationships with industry, universities and other research groups related with the nutraceutical industry.
-
Coordinate graduate students of the Natural Products and Nutraceuticals group. Training and support on the development of HPLC and CPC methods of analysis and separation. Development of new bioassays for the screening of bioactive components.
-
Analyze and discover anticancer compounds and methods for producing them from agave (Small size company project)
-
Analyze and discover bioactive compounds and methods for producing them from byproducts of a Food Processing company
